dc.descriptionThis study has three main objectives; 1) to study Chiang Mai clean vegetable producing system; 2) to develop Chiang Mai clean vegetable producing system to reach international standards and 3) to create and develop clean vegetable producing system that is sufficient and sustainable. Participatory action research with quadruple party levels was conducted. The quadruple levels are firstly community. The second level consists of sub district. The third level consists of 10 communities of district. The fourth level is province. The study found that the clean vegetable producing system in Chiang Mai has a variety of systems such as the pattern of clean vegetable producing used at present, producing clean vegetables of Agricultural department, Ministry of Agriculture and Cooperative and also producing system which is standard. Each group of agricul-turists from 10 districts has its own methods. However, their producing must be standardized. The department of Provincial Agriculture has set Good Agricultural Practice as the basic standard. Department of Agricultural Academic will inspect and approve the producing system classify by 3 levels. The first level is the producing system which has safe products. The second level is the producing system which has safe products and free from vegetable disease. The last level is the producing system which is safe, free from vegetable disease and of good quality to satisfy consumers. The study also found that agriculturists should emphasize growing for consumption in their households. The remains will be sold in their own communities and at other local community markets. The researchers also collected clean vegetable agricultural products which Chiang Mai agriculturists grow based on the sufficiency economy concept. These agriculturists have been awarded GAP from the Department of Agricultural Academic in Chiang Mai. Ten species of vegetables grown by these agriculturists consist of pak choi, leeks, Chinese kale, common beans, Chinese spinach, water convolvulus, lettuce, tomatoes and celery. Concerning local vegetables and herbs, the Department of provincial agriculture is starting to check GAP. The local vegetables and herbs free from chemicals. These vegetables are chaom, cylon spinach, sacred basil, sweet basil. Most of the agriculturists grow and consume in their household and I distribute to neighbours. The Department of Provincial agriculture has started to check the quality of these vegetables because they are much more consumed and well known in the market.th_TH
dc.description.abstractการวิจัยครั้งนี้ มีวัตถุประสงค์ 1) เพื่อศึกษาระบบการผลิต “ผักปลอดสารพิษ” จังหวัดเชียงใหม่ 2) เพื่อพัฒนาระบบการบริหารการผลิต “ผักปลอดสารพิษ” ของจังหวัดเชียงใหม่ให้ได้รับมาตรฐานระดับสากลและ 3) เพื่อสร้างและพัฒนาระบบการผลิตผักปลอดสารพิษ จังหวัดเชียงใหม่ ให้เกิดความพอเพียงและยั่งยืนการวิจัยครั้งนี้ใช้วิธีวิจัยและพัฒนาแบบมีส่วนร่วม (Participatory Action Research: PAR) กับหน่วยภาคี 4 ระดับ คือ ระกับชุมชน, ระดับสอง หน่วยภาคีระดับตำบล, ระดับสาม หน่วยภาคีระดับอำเภอ จำนวน 10 ชุมชน และระดับที่สี่ หน่วยภาคีระดับจังหวัด ผลการศึกษาตลอดระยะเวลาโครงการ 1 ปี พบว่าระบบการผลิตผักปลอดสารพิษของจังหวัดเชียงใหม่ มีลักษณะของการผลิตที่หลากหลาย ได้แก่ ลักษณะการผลิตผักปลอดสารพิษในปัจจุบัน การผลิตผักปลอดสารพิษตามวิธีการของสำนักงานเกษตร กระทรวงเกษตรและสหกรณ์การเกษตรและระบบการผลิตที่ได้มาตรฐาน ซึ่งเกษตรกรแต่ละกลุ่ม ทั้ง 10 อำเภอ ต่างมีวิธีการผลิตที่แตกต่างกันออกไปตามสภาพบริบทของพื้นที่ในชุมชนนั้นๆ ทางสำนักงานเกษตรจังหวัดได้กำหนดมาตรฐานของการปฏิบัติทางการเกษตรที่ดี (Good Agricultural Practice, GAP) ซึ่งกรมวิชาการเกษตรจะเป็นผู้ตรวจรับรองกระบวนการผลิตของฟาร์มเป็น 3 ระดับ คือระดับแรก คือ กระบวนการผลิตที่ได้ผลิตผลปลอดภัย ระดับที่สอง คือ กระบวนการผลิตที่ได้ผลิตผลปลอดภัย และปลอดจากศัตรูพืช และระดับสุดท้ายคือ กระบวนการผลิตที่ได้ผลิตผลปลอดภัยปลอดจากศัตรูพืช และคุณภาพเป็นที่พึงพอใจของผู้บริโภค การจัดการผลิตผักปลอดสารพิษ ภายใต้แนวคิดเศรษฐกิจพอเพียง พบว่าเกษตรกรเน้นการปลูกเพื่อบริโภคเป็นหลัก ที่เหลือถึงจะนำไปจำหน่ายให้กับชุมชนของตนเอง และส่งขายไปยังตลาดชุมชนเพื่อเพิ่มรายได้ให้กับครอบครัว ซึ่งนักวิจัยได้รวบรวมผลผลิตทางการเกษตร “ผักปลอดสารพิษ” ที่เกษตรกรในจังหวัดเชียงใหม่ได้ทำการผลิตตามแนวคิดเศรษฐกิจพอเพียง ซึ่งเกษตรกรที่เข้าร่วมโครงการผลิตได้มาตรฐานของกรมวิชาการเกษตร จังหวัดเชียงใหม่ และได้ออกใบรับรองมาตรฐานให้กับเกษตรกร ในการวิจัยปีที่ 1 นี้ จำนวน 10 ชนิด ได้แก่ ผักกวางตุ้ง, กระเทียมต้น, คะน้า, ถั่วแขก, ผักโขมจีน, ผักบุ้ง, ผักสลัดใบ, มะเขือเทศ, ขึ้นฉ่าย และปวยเล้ง สำหรับการผลิตผักพื้นบ้านและการผลิตผักสมุนไพรนั้นสำนักงานเกษตรจังหวัดกำลังเริ่มดำเนินการตรวจสอบคุณภาพการผลิต (GAP) และอยู่ในช่วงกำลังเตรียมการแต่ขณะนี้ทางสำนักงานเกษตรจังหวัดได้เริ่มเข้ามาตรวจสอบคุณภาพผักดังกล่าวมากขึ้น เพราะผักดังกล่าวเริ่มเป็นที่นิยมบริโภคกันมากในท้องตลาด สังเกตได้จากอาหารแปรรูปจากผักต่าง ๆ ได้เป็นที่นิยมของผู้บริโภคมากขึ้น และสำหรับการวิจัยในระยะต่อไป นักวิจัยยังได้กำหนดแนวทางในการพัฒนามาตรฐานผักปลอดสารพิษอีก 14 ชนิด ได้แก่ กล้วย, หน่อไม้ฝรั่ง, ข้าวโพดฝักอ่อน, ฟักทอง, ผักกะเฉด, กระเจี๊ยบเขียว, กระเทียม, เห็ด, หอมแดง, ถั่วฝักยาว, แตงกวา, พริก, ข้าวโพดหวาน และมะเขือเทศ ให้ได้มาตรฐาน ทั้งนี้เพราะผักดังกล่าวเป็นที่นิยมบริโภคเป็นจำนวนมากth_TH
